JERSEY’S MARINE LIFE
On calm summer days the sea around Jersey is blue and clear, more like the Mediterranean than the English Channel.In the winter though, it can be wild and hostile, especially during storms when the pounding waves break half way up the cliffs and spray is blown far inland.At times like this it is hard to imagine how anything can live in such seas, but live it does and in an astonishing array of shapes, sizes and colours.
The Spiny Spider Crab and the Chancre Crab (pronounced Shank-ra) are the most popular type of crab used for eating.Other crabs found around the islands are the Small Velvet Swimming Crab, the Slender Crab, the Scorpion Spider Crab and the Teddy Bear Crab named not because it is cute and cuddly but because its body and legs are covered in hairs giving it a furry appearance.
Lobsters and Crawfish are in abundance in our waters.A lobster will shed its shell up to 25 times during its first 5 years of life and will eat its own shell after moulting to help harden its new shell.A female lobster’s pregnancy is a long one! From mating to the eggs hatching can take up to 20 months!!A lobster can then take between 5 and 7 years to mature to reach market size.If a Lobsterman catches a female bearing eggs they will release it back into the sea so the eggs can be allowed to hatch.Most people think that the rubber banding seen around a caught lobster’s claws is to protect the fisherman!It’s actually there to protect the other lobsters!They become extremely aggressive when crowded together in tight quarters (for example holding tanks and live seafood display tanks in restaurants) and vicious fights often break out.
Jersey Oysters, Mussels and Scallops are all farmed locally.When the tide is at its lowest you can actually walk out to the oyster beds in the south-east of the island where you will probably come across the bags of shellfish being gently matured in plastic sacks.
The Jersey Ormer is a highly regarded, indigenous Jersey shellfish, related to the marine snail known worldwide as the Abalone.Fishing for Ormers is currently banned to ensure the protection of the species.Although, even when it wasn’t, you would have been unlikely to find Ormers on a menu or in the Fish Market as they are so scarce.If you do discover them however, they resemble large limpets and taste more of meat than fish, also they have to be beaten with a mallet before cooking.
If you haven’t been already, it is well worth a trip to the Beresford Street Fish Market in town where you will find a wonderful array of the best fresh fish and Jersey seafood most of which would have been caught that morning including Mackerel, Turbot, Bream, Sea Bass and Conger Eel.
Traditional Jersey Dishes Still Popular Today
Traditional Old Island dishes include Conger Head Soup with Marigold Petals, Jersey Bean Crock (a thick bean stew), Jersey Wonders which are a deep fried pastry that is supposed to be made only on a falling tide.Cabbage Loaf which is bread baked whilst wrapped in cabbage leaves and of course Jersey Black Butter which is made with cider, apples, liquorice, lemons, sugar and allspice.
